Processed ossocollo, shoulder and bacon meats are used a caldo (while still warm) immediately after slaughter and flavored with spices.
The product comes hand tied and then it is dried in the cellars for 12 hours.
The result is a medium grain product with uniform color; the flavor is sweet and delicate with a light scent of wine.
