Worked a caldo (while still warm) it is produced using the cheek, the tongue, the shin, the head, the rind and all the small muscles. Once the meats are minced and kneaded, spices are added according to the Lovison recipe handed down for generations which involves the use
of coriander, nutmeg, cloves and pepper.
12 hours in the drying room, 7 days in the aging cellar.
Lovison Precooked Musetto is ready to be served in just 25 minutes of boiling.
It is a medium grain mince perfectly sticky with a spicy and sweet flavour.
