Processed ossocollo, shoulder and bacon meats are used a caldo (while still warm) and seasoned with spices.
The product is tied by hand and then dried in the cellars for 12 hours. 
The result is a medium grain product with uniform color; the flavor is sweet and delicate with a light scent of wine.


- Ingredients: Pork (parts of the Ossocollo, Shoulder, Bacon), salt
- Spices: Coriander, Nutmeg, Pepper
- Shelf life: 30 days
- Storage: temperature <+ 4°C.
