Processed thigh, bacon, neck and loin meats are preferred a caldo (while still warm) with the addition of spices and a light garlic scent.
It is aged in our cellars for at least 6 months. The result is a medium-grain product with a balanced taste between thigh and pancetta according to tradition. The flavor is sweet and delicate, slightly spiced with intense aromas that envelop the palate.
